ChicoryChicory is a vegetable, grown both for its green, slightly bitter lettuce and for 'forcing' (putting the roots put in the dark) to produce a white 'chicon' (sometimes called endive). The root contains a polysaccharide, inulin, which can be hydrolysed (broken apart) to yield oligo-fructans (fructo-oligosaccharides or oligomers of fructose) or fructose itself, a sweet and popular monosaccharide. The root can also be cooked and powdered to produce a form of 'coffee' much used during wartime. |
